Lake'O'crisco I usually just fillet them out. I've grilled trout before they good. I've smoke Salmon and it was very good. The next big hybird I catch I will try the smoke or grilled.
When I smoke or grilled leave the skin on one side it will just peeled right off when it time to eat.
