No expert, by any stretch of the imagination ... but, it's not likely a White Bass, because there's more than one stripe reaching the tail, the side stripes are too dark, and at 7lbs it would be a World Record fish (& 2lbs over the state record).
Body is a little too deep to be a Striper, so it's logically a Hybrid Striper ... even though it doesn't have the usual broken stripes. Barren River Lake is home to the state Hybrid Striper record fish @ 20lb 8oz

So what's the fail-safe sign to go by? Patches on the tongue like a spot vs. largemouth or something? (sorry, slow learner I guess)

Check out the "note" at the bottom left of the Fish ID page (just above the Texas Parks/Wildlife icon).
Stripers are also capable of having broken or incomplete lines on their sides, so body shape, tooth patches, and lines reaching the tail have to be taken into account to distinguish a Striper from a Hybrid Striper. But, usually body shape is the first means of distinguishing between the two.
It's difficult to tell the three of them apart when they're small ... so tooth patches can help in those situations.

A lot of it has to do with where your fishing. Barren is stocked annually with hybrid. White bass have been re-introduced into the lake since they became scarce and to my knowledge don't think the lake has any Stripers. Your right, the broken lines are usually always present although not as obvious in the pic. Main thing CP nailed was the body shape. Stripers are more streamlined cylindrical shaped. Hybrids are chunks more football shaped.
