Crappie Fishing
Anyone Have Any Good Recipe For Fryin Crappie. Thanks And Have A Good Day.

The "war dept" just drags the fillets thru cornmeal with a little flour and seasoning in it(salt and pepper)--dips them in buttermilk and then drags them in the cornmeal again before dropping in the hot grease. Kind of a simple way to do it, but they are GREAT!

I usually just lightly dust my Crappie in Yellow Corn Meal ... especially if I cook them "skin on". It allows the "nutty sweet" taste of the fish (skin oils) to come thru more. When using filets (meat only) ... Southern Star Fish Fry Seasoning mix is my favorite. It adds just a bit of "spicy" taste, without being too "hot" or overpowering the taste of the meat.
I don't much care for the "breading" type mixes (the ones that you mix with liquids, and dip the fish in) ... or the ones with so much spice in them, that you can't taste anything else (Uncle Bucks comes to mind).

zataran's dry is the best i have found kind of hot but very flavorful u can find it at any grocery store i think the spelling is correct?

I switched to "Corn Flake Crumbs", found at the grocery.
It fries up faster than cornmeal which makes it better for small
fish. You don't have to overcook the fish to get the crust crispy.
