Yes these fish make excellent catfish bait. And their meat is not really desired for table fair, as we traditionally like to cook crappie, walleye and catfish. But …………. They are excellent smoked. These fish are highly sought after in Canada and in the northern regions of Michigan and surrounding states far North. Smoke them up and let them sit for just a little bit in the fridge to cool them down. Get a nice layer of paper towel on top of a plate. Flake out the meat on the paper towel and put another layer of paper towel on top of it to remove some of the oil from the meat. Sit down and watch a sports game with a beer, saltine crackers and flaked out smoked fish meat. Guys that is just awesome. Glad to hear that they are down here. Considering the fact that American Shad aren't native to anywhere even close to Kansas makes it pretty much impossible for it to be an American Shad. Shad are built much taller than Goldeye and also lack the teeth that are in that much heavier built jaw of the fish in the picture also.
on the Arkansas river, we called them skipjack. A kind of freshwater herring. there is no better cut bait for catfish! used to be our job as kids to catch them on bream jigs for trotline bait
