Everyone knows how to fry crappie, heck thats what I have done my whole life. But I came across this recipe on the mississippi forum and it rocks....I just added the bbq sauce and hot sauce to it. Take your crappie filets and lay em flat, sprinkle whatever seasoning you want on it but be sparing because they will get flavor from the bacon....thats right boys and girls bacon! Roll them filets up in bacon and use a toothpick to keep em tight. The recipe I read said to grill em from here, but this is what I did. I used a pan like a griddle and then once they are 3/4 done I slap a little Sweet Baby Rays Sweet 'n' Spicy bbq sauce to them and sprinkle a little chipolte hot sauce on em. THe pic says it all.....delicious.
