My second passion other than fishing and drinking beer is cooking outdoors. I cook on everything, smoker, gas grill, charcoal grill, dutch oven or open fire. I thought it might be interesting to see what everyone else likes to cook. I have recently started cooking fish more and more either on the smoker or on the grill.
I am going to cook chicken thighs and chicken breasts on the grill tonight. I am trying a new recipe using a new marinade for the chicken so hopefully it will turn out decent.
Tomorrow night is crappie on the smoker. I finally found a way to smoke crappie on my Traeger that works really well! I dry the crappie fillets well and coat them with a little seasoning. Rub a liberal amount of the new olive oil mayonnaise on them and then roll them in crushed Ritz crackers. Put them on a sheet of heavy foil and smoke at 225 degrees for about 30 minutes. Crank the Traeger up to about 350-375 degrees and cook until flaky. Damn fine eats!! Thumbs Up

well hop on over to the missouri board, there is fishing talk over herei'm having a cold beer, getting ready to light the charcoal, grilling sum skewered shrimp ive been soaking in heavy cream and butter, with sum blackend seafood magic seasoning... and throwing some sliced zuchinni on the grill as well with some cavender's greek seasoning on that
got some steak's marinating in sum A1 chicago steakhouse marninade to grill tomorrow nite! be living off restaraunt's this weekend cuz i'm a going fishing for 3 day's

I live in the town of Pomona. I like crappie just about any way I have fixed them, just have this issue with the cardiologist harping on me to eat better so I have been working on different methods of cooking them to help with the whole life expectancy issue! LOL!!
One of the best, hands down, is a recipe that calls for eggs, Parmesan cheese, capers, flour and olive oil!! It just takes a long time to prepare and we dont do it very often because of the time factor.

Here is a great way to cook walleye fillets or large crappie fillets (over 12 inches work best). Get a large nonstick shallow pan nice and hot on 3/4 heat, take fillets and pat dry well with paper towels and spray both sides with a little nostick spray to help the salt and fresh cracked black pepper to stick, put a dab of butter in pan and sear both sides of the fillet very light brown and let finish on 1/2 heat. Does not take long to cook, don't go by a set number of minutes but instead when thickest part of fillet flakes all the way thru. Fantastic with a little butter melted over the top or whatever you want on it, freshly small diced fresh garden tomatoes are fantastic. Or make a lemmon butter sauce by microwaving a little butter and after melting pour in some lemmon juice and stir good...fresh cracked pepper and oregano are good in this butter mixture also. With a good spatula and nonstick pan once you get good at this the fillets will stay intact and not fall apart, takes some practice.
I rinse and pat the filets dry and dredge them in olive oil then coat them in a bowl with a mixture of Panko, Parmesan and garlic powder and place them in a Pam sprayed glass baking dish. After all the filets (usually five for us) are placed in the dish I try and use up the remaining coating by spooning it on top of the filets. Then I add cayenne pepper and then using a spoon I drizzle the remaining olive oil over the filets until they are oil moistened. I even pour more to have olive oil drizzled all around the filets. I try and run the grill at 425 to 450 (don't know how accurate the gauge is) then cook for approx 15 min then turn them for another 10 or so minutes. Just check the coating while cooking since it will get somewhat burnt.
Also I should be going through Pomona tomorrow with Ron on my way to Green Acres in the morning then onto Melvern.

Well I hope you guys have a great time!! I am already itching to go back to Melvern but I have class tomorrow and wont be able to go until the following weekend. (actually I could go this weekend but think Ill stay home and get some things done instead of dealing with the "owners" of the lake this weekend! LOL!!
P.S. I dont know if you guys buy your minnows elsewhere or on the way but Green Acres usually gives a good count and so does the older gent at the marina at Melvern. The older fella works during the days and he usually give a really good count on the minnows!
