    Similar to flat head. Not the same but that's the only way I know how to describe it. We got 4 gallon bags and 13 quart bags from them.

    Yes they are spoonbill/paddlefish.

    Probably tastes like sturgeon since they are related. Is it oily? Do you have to parboil it?

    You should really give crank baits or bobber & skein a try. Lots more fun and effective if you haven't tried it. Fishing for salmon has come a long ways.
