Even a 10 inch fish isn't a good fish to fillet, but it is a good fish if you fry it whole, that's why I try to stick with 12+ inch fish..Those 12+ inchers are excellent fillets and fillets are all we want to eat. Big fillets don't seem to taste as good fried up as smaller fillets, but if you cut those larger fillets into smaller strips, they fry up perfect....Just my :twocents
