The stuff appearing at the far right is the latest information from the sonar unit as your boat passes over the fish. If your transducer (the black thingie attached to your sonar) is on the transom, then the fish are behind the boat. If your transducer is mounted on your trolling motor, then the fish are under your boat.
You sorta have to imagine yourself sitting in another boat watching your boat pass by. Where the fish arcs and other stuff is drawn on your graph is where your transducer is in relation to the fish you're seeing. So, the fish are under the boat (trolling motor mount) or behind the boat (transom mount).
As to which way they are going, the unit cannot tell what direction or speed the fish are moving, because it just gets a 'snapshot' in time as it passes over them.
