If it were me I'd run as it is and fish a few times to see if there were any voltage issues at the end of the day.

I've never had an electric start and I'm worried about getting stuck on the water. The previous owner had jumper cables in the boat and said he had to use them at least once. I'm switching the trolling motor batteries to lithium so I don't think I can jump from it. Is there a way to monitor when I might be going down? I have a voltage meter and It is currently reading 12.45. Not sure at what point I get concerned.
Just bought a noco boost jump starter to relieve my worries.
You can add voltage to the readouts on the screen.

I switched all of my electronics (2 93sv and livescope) to their own battery. Running all of that plus the pumps off the starting batter was becoming a problem if I fish a long day. Running the starting battery down to where it would barely crank the engine. Also, live scope needs at least 12 volts to function properly. Otherwise, the transducer loses connection every few minutes. Not sure what all your running but a 15ah battery will run 1 graph for about 6-7 hours. Reducing by half for every additional graph. Livescope draws about twice as many amps as a single graph. So 15ah would run my set up for about 2 hours. You may not be running that much so you might be fine.
If it's time for a new battery, why don't you just increase it's size and not worry about it.
I have a 60HP 4 stroke and used to run a 27 series battery. I had lights, live and bilge pumps plus 2 Low HDS units on it. At the end of the day it was getting to be too much. I switched to a 29 series and haven't had any more problems.
I like the idea of that noco jump starter regardless of what size battery you're using.
