HDS touch 7. I have one and it is so much easier to use than trying to maneuver through all the screens and buttons to change something. It has a super sharp image and is easy to set up.

What needs to be changed to get full potential from finder

74sv is for saltwater. 73sv is freshwater.
My choice is not on your list.
Of those on the list I would go with the Lowrance.

With the HDS 7 do I need to upgrade anything or use it out of the box?
I also have an hds gen 2 7. make sure you are buying the bundle that includes both the sonar and the side scan transducers. if you buy a gen 3, the software will be up to date. if you get a gen 2, you will need to update the version from the Lowrance website, but it only takes about 10 minutes to do. I love mine is all I can tell you, have never used any other than Lowrance.
I would go with an 899 I have a 999 and it has a very good image on all views 2d is awesome and the si and di have great picture quality I couldn't be happier with my switch from lowrance. Not saying Lowrance isn't good because I really liked my HDS finder just ran across a ipilot link for a price I couldn't turn down but am very happy with my switch. The humminbird was great right out of the box I have the HD transducer.
HB and Garmin come with transducer. HDS only has the 2d I believe
