Thru a NMEA adapter cable and sensors. What you git is dependent on the engine u have. My guess.

You can set up a nmea network on the core units , and display engine data .... depending on the engine ..... but most find it too expensive and complicated ..... easier to use a monitor such a Mercmonitor.
I have a 1995 Evinrude 40hp. Planning to add networking capabilities between sonar units. No clue what that entails or if it helps with motor to sonar unit gauge readings.

My HDS 7 has similar features but you have to have the mating equipment and wiring to hook it up. Also, some of the features only work on newer fuel injected engines.
One thing I do use though and it requires no additional wiring is the voltage display. If you set that up to display on one of your screens you can monitor your cranking battery voltage and also verify that the alternator is working. On the Lowrance you use the overlay data feature. On my HB it shows on one of the system screens so I just jump to that view to check it.

Yes, I added NMEA monitoring to my War Eagle. Expensive with Yamaha. Too much proprietary stuff.
