Chart speed for HDS-5?

What would be a good chart speed for an HDS-5 in order to see my bait on the sonar?

Also, is it possible to set this unit up so you can see the fish move?

Sensitivity 74 to 78,- surface clutter on low, - Noise reduction on low,- Ping 18-19,- chart speed on default,- color line 72 to 80
This should get you there
