Sounds like your ducer is coming up too much when you're up on plane. I have the same problem at around 12-15 mph on my 997. Tried to lower the ducer to get it down in the water more and it got better, but still loses readings at higher speeds. If it's a fiberglass boat you can epoxy it to the inside of the hull for a flawless reading.

...but just make sure the roller on the trailer doesnt hiut the ducer when loading or unloading.
