Tom, I'm not Joby, but I use my Humminbirds in much the same way as you're describing.
My recommendation is to get two units: a Side Imaging fishing system for the console (could be a 798, but I'd recommend a larger screen unit, like an 898, a 997/998, or an 1197, depending on your budget) and a 2D sonar/GPS unit for the bow (could be a 799, an 858, or a 900 or 1100 series unit....again, depending on your budget). You'll tie these units together using a Humminbird Interlink system
With a side imaging fishing system at the console, you can tool around your bay, identify objects with Side Imaging, and drop waypoints on those objects. Those waypoints will be written to the Interlink and shared automatically with the unit at the bow. If your bow unit isn't on while you're marking objects from the console, the new waypoints will be shared with the bow unit as soon as you turn it on to fish.
This is essentially the system I use on my boat to find and then fish isolated pieces of structure. I'm using an 1197 at the console and a 788 at the bow (to be upgraded to an 800-series unit as soon as they are released), tied together by an Interlink.
