    Default Hot Water Cornbread


    Try this out guys, I had a girl at work make these for me and boy were they good. So I got the recipe and tried it myself. Turned out this ole Mississippi can cook.....

    1 cup self rising buttermilk cornbread mix
    1/2 onion chopped up/ green onion works too
    1/2 green pepper chopped up

    Mix ingredients and pour in hot water. Make the mix were it sticks together, not too soupy.

    Drop in fry pan and brown both sides.

    Yummy,
    Goes great with some red beans or greens..........

    I love hot water cornbread.

    It's good with most anything or just a snack all alone.

    The recipe I use:

    2 C cornmeal
    1 C all purpose flour
    3 C boiling water
    1 t Salt (more or less to taste)
    1 t Baking Powder

    Mix all dry ingredients together. Add boiling water reserving 1 C and mix well.
    Continue to add reserved boiling water to mixture until a moist dough is formed allowing you to make patties out of it. Sort of feel thing of not to dry but, not so wet that you can't form a patty. Make it about the consistency of salmon patties.

    Then fry the patties in 1/4 - 1/2 inch of oil in a skillet until a deep golden brown.

    never heard of anyone using Water, We alway used Buttermilk or sweet milk...

    That's for regular cornbread and you have to add eggs to that and oil to the batter.

    Hotwater cornbread or fritters or Indian cakes are more akin to a fried grits cake than regular cornbread.

    A pot of poot beans and some hot water cornbread is some fine eating (unless your broke and that's all you can afford , been there got the t-shirt.)
