Red Curry Crappie
2 T Red Curry Paste
2 T Butter
2 C Whole Milk
1 t chopped garlic
1 t paprika
20 or so Crappie Fillet
On a greased rimmed cookie sheet place fillets in a single level. Use the paprika, salt and pepper to taste and place in a 400 degree oven for no more than 10 minutes.
While the fish is in the oven, melt the butter in a skillet over med high heat. Add the garlic and curry paste to the butter and mix well. Add the milk and bring to a soft boil and combine well and remove from heat.
Remove fillets from oven and pour the red curry mixture over the fish and return to oven for an additional 5-10 minutes of baking time to thicken the sauce.
Serve over a bed of rice.
