Well, my waist line is growing lol and could use some of your guys favorite way to cook up some crappie or fish in general besides frying. The air fryer isn't to bad, blacked is way to smoky in the house especially since it's winter here and can't really air out the house. Any ideas or recipes are welcomed!

It makes no difference to me how I cook Crappie it's Never Healthy! blackened the amount of clarified butter used, pan sauteed with Tony's again I have the fillets floating in un-salted butter, and the best I can offer to your question is deep frying I drain on a wire rack while the cooked fillets are in the Warming Drawer which really drains them well. Still un-healthy.

One of our favorites is cooked whole (or you can do fillets) Cantonese style like what you get from a real Chinese restaurant, and sometimes it's on the menu that even I can't read instead of the regular menu, depending on the type of restaurant. Basically, you steam the fish with green onion, and while steaming prepare hot oil (I like olive oil or avocado oil for health reasons; using peanut, vegetable, or canola oil defeats the whole purpose of this) in another pan. When the fish is cooked, put it (and the green onions) onto a plate and sprinkle soy sauce onto it for flavor and to help make the sauce. Sprinkle sesame seed oil, and then pour the hot oil onto it to sear it, and the leftover oil helps make a sauce that you eat with the fish and rice. Some recipes garnish it with scallions, ginger, cilantro--this is up to you. Some people pour the oil onto the garnishing; some people put it on after. Hopefully you've tried the "Baked Parmesian Crappie"or the " Baked Garlic Parmesan Crappie" that was posted here? We've been doing them that way quite a bit lately.
