I don't know what to call it yet I needed to do a trial run for a upcoming meal. I like the butter & Tony's sauteed Crappie but I wanted to come up with something that has some vegetables in it.

First add 1/2 stick unsalted butter to a large sauce pan.

To that add 3 Tsp Tuscan Garlic seasoning and 1/2 Tsp Basil dried. Fry the seasoning on medium low till a little color develops.

Now lay in your fillets, here I used 6 from 10-11in Crappie.

At this point I turned the heat up to medium and swirling the pan sauteed the skin side of all the fillets first.

Cooking quickly just to put a light crust on the fillets I flipped them over and quickly put a sear on the other side. You're not trying to cook the fillets now so they will hold together.

Remove the fillets from the pan and place in a toaster oven or air fryer oven set to 200-215 degrees. It took me 15 minutes to finish the dish so when the fish came out of the oven it was perfect. the fish was in the oven for 2-3 minutes after the timer turned it off before I removed them.

In this order so everything cooks add some Carrot Chips to the remaining butter and seasoning sautéing to begin cooking them.

Next add the diced Butternut Squash and sauté it for a bit.

Now section up a few stalks of fresh Asparagus and add with whole Snow Pea Pods.

Cook till to your liking then turn the heat down a bit and add 1-1/2 Tsp AP Flour. I have already adjusted the amount as I used 2 Tsp and the sauce is a little too thick. It should run thru to the rice well but it didn't. Just a little too much flour in this dish.

You should have enough butter remaining to make a white roux cooking the flour just till the flour taste goes away.

2 Tsp of the Chicken Bouillon, 1 Tsp of the Trinity, and 1/2 Tsp Black Pepper is added next. Once in and stirred a little add 1/2 cup of water and blend well before bringing to a simmer to thicken.

Once thickened add 1/4 cup Heavy Cream.

Bring back to a very low simmer blending the sauce together before removing from the heat.

Since I'm working in the shop today I just cooked a pack of microwave yellow rice but the plan is to serve over Angel Hair Pasta on dinner night.

Plating is starch first, fish next, and lastly the sauce on top. The fish finishes in the oven so it held together for plating. Some Garlic bread or Texas Toast would complement well.

I slammed the whole plate.......it's really good. there is so much salt in the seasonings I didn't add any during cooking. Waiting till sitting down to eat I found it had plenty of salt for me. I hope you try.
