I don't think I ever posed my fried Eggplant method so here goes.

The goal today was Eggplant Spears to dip in the Baked Crappie Dip. I first cut the Eggplant into spears and placed them in a Ziploc bag with some AP Flour. After giving them a toss I let them sit on the bar while I prepared the Drudge.

While the flour is forming a glue on the eggplant I use 1 egg to 1-1/2 to 2 cups real Buttermilk not the Lite stuff. Whisking well to combine.

Once I remove the eggplant and shake off the excess flour I add the pieces to the drudge flipping the pieces with a fork till wet. Then using the same fork I add the pieces of eggplant to the fish fry. Giving the fish fry a swirl coats the eggplant without removing any of the previous steps.

I kinda toss the pieces between my hands knocking off the excess fish fry before adding to the hot oil.

Once golden brown I drain always on a wire rack and keep in the warmer till all the frying is done. I hope you enjoy.
