I have been harvesting our green figs for sometime now saving them in the fridge for cooking later. Well this morning "Later" arrived. Working late yesterday I decided to turn on the A/C in the shop but eat a interesting breakfast this morning before returning to the truck project.

Beginning with cutting up about 4-5 cups of green figs (ripe) to this I added 1/4 cup Turbinado Sugar and 3 tablespoons of Un-Salted Butter. Allowing this to cook stirring occasionally.

Once reduced like the picture I seasoned the mixture with 1/2 tsp Cinnamon, 2 pinches Ground Nutmeg, a pinch of Sea Salt, even less than a pinch of Ground Cloves.

Once done I fried up some Smoked Sausage for a protein.

Plating up when the hot Pecan Waffles came out of the Iron I buttered a bit then spooned the Fig Reduction over the Waffles, added the Sausage on the side, and topped with Extra Rich Whipped Cream.
