Yesterday was Independence Day but I was anything but independent from my truck repair so lunch was a quick Crappie fry. I sliced up my first Bon Temps' Eggplant of the season along with some Monster Button Mushrooms to fry along side the fish.

The secret to a great crust of fish fry on mushrooms is to leave them with just the flour coating for 10 minutes before the buttermilk egg wash. I use 2 forks to handle them into the fish fry which they stay there for 5 minutes before frying. Going back to work on the truck was tough after this meal. That Catalina Dressing is just fine on fried Eggplant!
