    Ditch Pickles & Bell Pepper Rings with homemade Bread & Butter Pickles on the side.

    Didn't get off the Roof till close to 2pm. Rolled out a fried lunch for the break before heading back to work.

    There is a scattering of Crappie fillets mixed in, I ate till refusal. Bell Pepper Rings dipped in Remoulade sauce is the Bomb! Zatarain's Seasoned Fish Fry with a Buttermilk egg drudge to dip the fillets & rings in before breading.

    I paper towel the fillets dry, let them warm up a bit, dredge them in AP flour, shake off the excess, lay them out on parchment paper till the flour wets out while mixing the egg or two into the buttermilk. After dredging the buttermilk dipped fillet in the fish fry I lay the fillets out on clean parchment for 5 minutes before frying. Leftovers right out of the refrigerator 3 days later they are still crunchy after 10 minutes from ice cold in the air fryer. I make a fish sandwich using the bell pepper rings on top of the leftover fillet, best fish sandwich to date for me.

    "D" we get a marsh bass that predominantly eats Blue Crabs. Better than Crappie to me as long as under 1-1/2lbs. If we ever have a get together I will bring a Gross of Tamales with me.
