    Default Today's Lunch Corn Flake Baked Crappie Topped with Fried Oysters


    Still Pounding the fillets. I shared quite a few and still am eating fish overtime. Had some oysters waiting for the Baked Crappie today. Certainly was a nice twist to the dish.

    Used a straight egg wash today with Zatarain's Liquid Boil seasoning with Lemon. Marinated the fish for 10 minutes so the boil seasoning would be absorbed a bit before crusting. I sprinkled the Kinder's Buttery Steakhouse seasonings on the fillets too.

    Crusting in these plastic containers works the very best. I am able to crust a lot of fish with much less waste.

    I like Greek food which Lemon & Dill is frequently used. This brand of Lemon Dill Sauce is my favorite.

    Frying a few oysters was done with Zatarain's Seasoned Fish Fry with Lemon. Catch a theme here, lots of Lemon..........it really works well here.

    Plating, I cheated with Uncle Ben's Packet Long Grain Rice. 3 projects going at one time today, had to get lunch done as quick as I could while still enjoying cooking. Topped the rice with two large fillets then the oysters.

    Sitting down to pound some calories lastly the Lemon Dill Sauce was drizzled all over. I wiped this plate out in short time. I hope you like this, it was a real treat to eat.
