My My, I ask my wife to make me Banana Bread French Toast and she paired it with Maple Blueberry Sausage. Now this sausage has a little kick so it went very well with the Steens syrup.
This is a local sausage carried by Walmart and Sam's. The plant is on Hwy 49 just south of Jackson MS. They make a Ole Number 27 Sausage that is a chicken sausage that is just fine. I buy about 8-10 packs whenever I'm by there.
Just a basic French Toast egg batter was used to soak the slices of bread in.
She split the sausage links as that is the way we like to pan fry it the put a nice crust on the cut side as well as browning the casing side.
The sausage was fried in just enough bacon grease to transfer the heat so pretty dry to improve the crust development.
Cooking both in Black Iron to get that Iron taste the French Toast crust was allowed to develop fully before flipping, straight butter was used on the toast.
I prefer Steens syrup with a spicy sausage where is is old school pure Maple all the way. Both of us like the Vietnamese Cinnamon dusted lightly before adding butter & syrup.

I really had to hold back with so many projects going simultaneously today and I have thought poorly about myself passing on seconds all day. I should have gotten a second plate, got stuffed, and just manned up and worked thru the discomfort.
