So you wonder how many ways you can enjoy your Tamales once made. Here is one of my go to Breakfast dishes. Now I was going Crappie fishing as soon as I ate so I didn't take time to melt my cheese so don't scratch your head and wonder why the cheese is not melted. Slow day today, only kept 18 Crappie, numerous shorts, but have a few bonus Marsh Bass, good eating too.

So I start out cooking 20 minute Jim Dandy Grits. I like to over cook them some myself so really 30 minute Grits. If not in a hurry I will steam the Tamales to re-heat but this morning the Microwave got the task. Just when using the microwave set your power to 50% and run twice the time. Your Tamale will warm up closer to fresh out of the pot with the reduced power / longer heating time. When the Grits are done I fry a couple of Eggs to top the Tamales but Soft Scrambled works well too. Seems the Quesadilla Cheese goes well to me so I take the Grits and spread on a plate, add the Tamales to the Grits, top them with the fried Eggs, Cheese, and lastly Herdez Taqueria Street Sauce. When I melt the cheese it is done in a oven, our Toaster Oven handles one plate so I don't use the big oven. I hope you try this if you like Grits & Tamales.
