I am planning on making my own batch of sausage when I get some time to do it
the fat content on great breakfast sausage is really high , not enough and it will be dry
not sure as we dont make it , but it for sure is in the 40% range or higher amount to be legendary yummy , we do 20% just on regular ground meat
As I have been told Boston Butt is about perfect to make sausage from. It will certainly take some tuning to get it correct
Could add some leaner cuts in there to get the fat right
