    Yep! That'll work right there for sure. I just pan-seared some salmon like that a few days back and it was awesome too.

    I need to make a creole cream sauce to top the tuna fillets with the next time.
    Since it is fish it is fairly guilt free. Lots of worse things we could be eating

    I had it in a restaurant on the Gulf. Nice Tuna steak with a cajun sauce with crawfish tails in it. Certainly was delicious. They also had a very good flounder florentine
