I will be trying that brine. The only one I have ever used is my "sweet pickle brine". What kind of wood do you normally use?
Although I have lots of fruit trees besides the pecan trees I only have pecan on hand all the time. So pecan is used for Pork & Fowl but I usually use what oak I have with beef. I'm hoping my fruit trees will get big enough to provide wood to cook with someday.
