    Default Sweet & Sour Crappie Fillets on a bed of white rice


    oh yeah... We ate this for dinner tonight and it was awesome. The wife loved it so it's gotta be good.


    You will need:
    1.5-2 lbs. crappie fillets -make sure they are really dry
    1/2 stick butter
    1 lemon peeled, seeded and diced
    1 small yellow bell pepper diced
    1 small red bell pepper diced
    1/2 small green pepper diced
    1/2 cup sweet and sour sauce
    1/8 cup barbque sauce
    2 tblspn teryaki sauce
    dash of red pepper flakes

    4 cups of prepared white rice

    Preheat oven to 375.
    Put butter in glass baking dish and melt in oven.
    Mix diced lemon and peppers in a bowl.
    Mix S&S sauce, bbq sauce, teryaki sauce and red pepper flakes in another bowl.
    Put fillets in baking dish.
    Spread over the lemon/pepper mixture.
    Return to the oven for appox. 15-20 minutes.
    Take the dish out of the oven, spread the S&S sauce mixture over the fillets and return it to the oven for another 5-10 minutes.

    Serve fillets over a bed of hot white rice. Sprinkle with sesame seeds if you have 'em.

    Go for it. Hope you enjoy it! We sure did.

    You can probably put the sauce on the dish initially instead of taking it back out the second time. I was just afraid the sauce would burn a little. But it might actually make it better. Who knows? I was winging it when I did it myself!?!?!

    After the first helpin, I said to myself "Self, this is some good... stuff. We need to put this on crappie.com." The first helpin was much bigger!
