you guys are missing it. most people over cook duck and dove and it tastes like leather. there isn't fat in meat so drys out quickly. breast out duck, put slices of raw or marinated, depending on how hot you like it, raw is good with slices of cream cheese wrap in bacon put toothpicks thru it to secure it, then dip it in and brush on marinade of beer, butter and italian dressing. then grill it to medium rare. Outstanding fare. your welcome.
doves just brush on marinade and wrap in bacon on grill, same rare to medium rare.
Fry them up with some onions. Just like eating liver and onions IMHO. And yes, I like liver an onions on occasion.
I went with this recipe and my wife's family, who are not hunters except one brother-in-law, all came over Christmas Eve for our family gathering. Ham, pork loin, and fried duck strips were the three meat offerings........the duck went very quickly and no one found a pellet. I tried to look extremely carefully as I was cutting them up as I have bit down on lead pellets before while eating fried squirrel and that's definitely no fun. I could only imagine what biting a steel bb shot would feel like!
