This is an easy fast way to make some Really good White bass Filets :
Filet as Normal
Wash in salt water and lemon juice till not oily (5 min)
Rinse well
DRY the FILETS on Paper towels
oil the Aluminum pan
Filets Skin Side down in pan
Sprinkle with lemon juice and Real Butter
Lowry's season Salt
Hot Sauce ( I don't but some like it )
Paprika
Seal it up with foil
11 minutes at 425 Degree oven or Hot bbq grill.
4 minutes with corner of foil pulled open.
Serve over Red Bean Rice Zataran's or Rice a roni.
Top with a light Horse Radish/Ranch Sauce.
This is as good as it gets for White Bass.
This is primarily good for the medium size fish.

Here in Michigan we have a huge white bass run in Lake Erie/ lower detroit river. It starts in early May ( its just starting now ) and the fishing is unbelievable. They hit anything and fight like crazy. If you were to hit it right ,catches in the hundreds is possible, and even likely. Most fishermen toss them back but I keep them, eat them and like them.
Do you shave the red meat off?

We always cut the red meat out, I think it makes all the difference plus we always put them on ice soon as we catch them. I believe keeping them cold and gettin rid of the red meat makes them mighty good and think more people would like them if they would just give them a try.

OK I am a bit jealous and curious. We used to fish the White Bass run every March in the upper Santee Cooper lakes. Then almost overnight they disappeared. According to our DNR and other experts, White Perch wiped out the spawns. We now have WP in most all our reservoirs and the White Bass all but vanished. The WP are good eating fish but hard to find decent size ones compared to the White Bass we used to catch.
My question is don't you have WP in Erie? If so, wonder why they have not
affected the WB?
The WP are now listed as an invasive species in SC and have no regulations for size or numbers.
