A little variation on crappie cakes
I call them crappie balls. Make up your crappie cake mixture. Form into balls with a cookie scoop or two spoons. Roll each ball in panko crumbs and put them in the fridge to chill for about an hour. Fry til golden. They fry up fast and wow, do they taste good! I fried 20 this evening and put 20 in the freezer to fry up in a week or so.
