Green Enchiladas Chicken Tortellini Soup

Got a new soup recipe from a lady I work with. It is super!!!!
2.5 lbs chicken breasts or thighs (I used thighs)
28 oz green enchilada sauce
24 oz chicken broth
1 cup half n half
2 cups pepper jack cheese
10 oz onion dip
4 oz salsa verde
1 can RoTel
chopped mushrooms
1 bag frozen cheese tortellini
salt & pepper to taste
Boil chicken & mushrooms in broth until done. Remove chicken to cool & shred. Add enchilada sauce, salsa verde, and RoTel. Cook tortellini for 5 minutes, then remove. Reduce heat, then add onion dip, half n half, and jack cheese. Stir until smooth, then add the tortellini & chicken back in and simmer for a bit on low. Salt & pepper to taste. Garnish with avocado, salsa, onions, hot sauce, etc.
I think you guys & gals will like it and it is super easy to make.
