    Default Fish Marinade

During my military time and my vast travels, I always noticed that other countries like to put malt vinegar on their fish. I also remember this while living in Canada in the summer time during my youth.

Normally not wanting to stray from the traditional cooking of fish, I recently decided to go outside the norm. I marinaded the fish (crappies) in the below recipie for 24 hours in my fridgerator before frying them in light butter.

    1 cup House Italian dressing
    1 cup White vinegar
    1 tbs lemon pepper
    2 tbs hot sauce

I use the vinegar because the italian dressing is a little too sweet for my liking. Hot sauce is optional as most like to add it afterwards. I used ghost pepper sauce to add heat without screwing to much with the flavor.

I have done this a couple of times since my first test (with and without hot sauce) and the family loves them. We also like to crumble up the fish and put it in salads.
I have OCD "Obsessive Crappie Disorder"
