Went I'm trying to watch the waist size I cook my crappie as follows. Very basic but taste good.
Spray large non stick skillet with Pam and heat
Spread crappie fillets out in pan
Sprinkle lightly with:
Chili powder
Garlic powder
Fine sea salt
And ground pepper
I cook until they are a little over cooked. Taste great.

I do much the same thing, but just a light sprinkle of Tony Chachere's, onion powder and garlic powder. Just to where you can barely see its on. Probably very similar to usafret99's mix. I do use a tsp of olive oil and get the skillet fairly hot, like medium high. just a few minutes per side, and it takes on a fried texture. A buddy tried it and used coconut oil instead of olive oil. Said he really liked it. His girlfriend has asked for more crappie.
Sounds like I do blacking in iron skillet with high heat. Remember to drain and then dry fillets on paper towels to prevent sticking to skillet.
