    Default It isn't crappie...... but..... I caught it in my garden!


    and it sure was good!!!

    Have not been fishing or anything much the last couple weeks as the garden has really been hitting it's stride.

    Decided today would be a great day to put up some fresh basil, tomato, onion & garlic pasta sauce.

    Picked about 1/2 bushel of Roma's with some Heirloom's thrown in to boost flavor. After peeling slow cooked them to preserve their natural sweetness.

    Although i usually keep pork for the winter months as it tends to be a heavier dish, I couldn't shake the feel for a good Pork and Pasta combo with the fresh pasta sauce.

    Started of by searing a nice pork loin and then cooking it off in the oven with some onions, celery and some of the tomato sauce as company.

    Plated things up over some simple spiral pasta, with a bit of curly and italian parsley on top.

    (Speaking of pasta, anyone have any idea where one might get some Trottole style pasta anywhere near the Leesville area?) It's the best pasta for these baked pork type meals because it holds so much sauce.

    I failed to mention that the apples on our apple tree have ripened up and we picked the majority of them this week. So i have apple butter, apple jelly and apple slices all over the place.

    So to polish things off for a lovely Sunday sit down meal with the whole family, I thought a nice simple apple pie fresh out of the oven would hit the right spots..

    Handmade crust, fresh apples, pinch of salt, sugar, cinnamon, allspice & clove, and a good rub of some nutmeg. (i never get to concerned with making fancy schmancy looking edges on my pies, i just like to use up all the dough)Name:  100_0341.jpg

    Figs should be ripening up soon, I'm gonna run out of canning jars any day now!

    Man that looks good!! No ripe tomatoes here in oklahoma at least in my garden. Did get the first ripe fig today!!

    Redge, I am so ready to put up some fig preserves.

    Have 2 huge fig trees that produce loads of figs every year and we still never have enough fig preserves

    Whereabouts you from in oklahoma? I was actually born in Stillwater and lived in Morrison till I was 6-7 years old.

    Prowler I live in Del City. I make fig jam every year, my nieces and nephews think its called Pig jam, they can sure go through it! I been reading some of the TX, MS, LA threads on gardening, I been wanting a garden fresh tomatoe for a month!!

    Well if you make it down here to in the next few weeks i can load you up..

    Need to get yourself a little garden going there! Nothing like some fresh sliced tomato's to go on a fried crappie filet sandwich!

    Del City is a little south of where we lived, My father was stationed at Fort Sill during that time.

    I do remember going to a lake and catching crappie with my family when i was a little one, wanna say it was keystone lake... I remembered we would go in the winter and remember that we would catch lots of fish there because dad said it was a hot water discharge from a power plant. I know we fished below keystone dam as well, used to catch white bass, stripers and other stuff there.

    wish i could have lived there a little bit longer, bet i would have had a lot more fun.

    No offense to any west Texas cowboys, but this is the best looking meal posted in a long time on here. Could have something with my Italian roots. And pork loin happens to be my favorite meat. Now I'm gonna have to cook my second loin in 2 weeks and try it with a good sauce! Cooked the last one stuffed with cream cheese and fresh spinach. Bought it that way at Kartchners in Krotz Springs.
    Now you 2 old Okie's go back to enjoying your nice conversation. ( tomorrow, nobody but me stays up this late)

    Prowler I have a big garden, however this year all spring long the weather man, kept predicting a freeze every week once a week, so I am just late, got my first roma last night, won't be long now, however in a normal year we are covered up with tomatoes by the 4th of July.

    You cant put pictures like that on here!!!!!!!!!!! What are you trying to do, start a migration??? Worked with a lot of guy from Leesville in Iraq. Didn't know they had this kind of talent. HAHA
