    has anyone ever tried "breading" their crappie fillets with pork skins?...It's not really a new thing at all,and it may have been discussed previously on this board,but it is very tasty...no,it's not cornmeal,but it's a great way to still have fried crappie without risking a glucose spike

    I like the spicey kind but to be honest about it -- if i know i'm having fish for dinner i cut out the other stuff for that day just so i can eat fish the way i like it. Don't dare eat the hush puppies or frys But i will eat a deep fry bread and butter pickle or zuccinee.. I also mix a 50/50 with almound flour and corn meal... The bake pamesan crappie is really really great..

    If i knew the grand kids were going to be this much fun i would of had them first i tell ya..

    You can soak the fillets in a whipped egg and fry them that way with salt and pepper. Zero carbs, and it's pretty good. It makes a kind of crispy breader.

    Hmm, never thought about that one - gonna have to try that. That would definitely be zero carb fried fish...

    I like to bake mine, just sprinkle whatever seasoning you like on them, I like the blackening seasoning, and use real butter(melted) 2-4 tbl spoons and bake at 500 degrees for 15 min. simple and good.

    Maybe you diabetics never heard of taking a caserole dish, putting a light coat of olive oil in the dish, lay your fillets in there with old bay sprinkled on them along with a slight amount of lemon juice. Or instead put a cajun sprinkle on over them. Cover your dish with saran wrap, place in microwave for about six minutes. When the alarm goes off, pull out, uncover and enjoy with a good salad. No potatoes, no hush puppies, but a great diabetic meal.

    Ps: You will be surprised how many of those that you can eat, sometimes i break them up and put them in my salad, try it you will love it.

    I take a large black cast iron skillet. I melt 3 tbs of real butter. I garlic press a bunch of fresh garlic into a skillet and lightly brown the garlic. I then stir a little teriyaki sauce in the skillet. Then I place each fillet in the skillet and immediately flip it to coat it on both sides. I have the oven heated to 375 and place the skillet in the oven for 15 minutes. YUM YUM.

    Wow, that sounds real good. I will have to try that. The wife and I just started using our cast iron dutch oven again to cook cabbage and green beans fresh from the garden and man there is no beating the flavor that comes from a well seasons cast iron pan. Thanks for sharing.

    Take fillets to the local BBQ man and let him wrap them in tin foil add some seasoning and a little butter. Smoked crappie fillets, pretty good

    melt some butter in a bowl dip the filets in it and then grate a bunch of parmesan cheese in a bowl with some italian seasoning and roll the fish in it and make sure to get a bunch of cheese pressed on good and place on a cookie sheet I like to sprinkle some smoked salt on at this point. bake at 400 till the cheese is golden brown about twenty minutes. This works good on chicken to.
