    Default Crappie Veggy Delight


    I have been trying to figure out a healthy way to eat crappie. This is what I came up with.

    Crappie Veggy Delight

    1 lb. crappie fillets
    1 cup broccoli pieces
    1 cup squash pieces
    1 cup red bell pepper pieces
    1/4 cup onion
    3 Tbs olive oil
    1 Tbs margarine
    paprika
    salt and pepper to taste

    Cut fillets into small pieces and coat heavily with paprika.Salt and pepper to taste. Set aside.
    Heat on medium high the olive oil in a large skillet and saute the vegetables until slightly done.Add just a little salt and pepper.
    Push the vegetables to the side and place the margarine in the middle of the pan.
    Place the fillets in center of the pan and turn in 3 minutes. Too long and they will fall apart.After turning place a tight fitting lid and cook for 5 more minutes. They should form a light crust with the paprika. Serve with rice and some good bread! Enjoy!!

    The rice is black rice and it is packaged by Hinode. Best rice I have tried in a while. Found it at Krogers.
