Tried something new the other night with some sockeye salmon. I bought a can of sockeye salmon from the store and dicided to make some salmon patties. I started with draining the water from the fish and then mixing it up in a large bowl. I then added about ten crushed up saltine crackers and them topped that off with some cayenne pepper and black pepper. I had three shallets left over from the other night so I finely chopped them up and added them to the mixture. instead of putting mayo in it to get my texture, I added creamy horseradish sauce until I felt that it would stick together well enough. I browned these puppies in a little olive oil for a while on both sides and ooooowwweeee were they good. I can't wait until the next time I have a bbq, this will have to be added to the menu.
