Years ago we ran out of Fish Fry when we were at the cabin. It's a 45 min run to the store so we starting digging for alternatives. This is what we came up with, and it was GOOD!

Whip a couple of eggs with a bit of milk. In a large ziplock bag, add potato flakes (instant potatoes) with salt & pepper to taste. Rinse the fish and dry them with a paper towel. Submerge them in the egg, let the excess drip off the filet, then shake them in the potato flakes until fully coated. Fry them as you prefer. It's delicious!
