Fish Cakes
1 Lb. Crappie
2 Med. Russet Potatoes
1 Cup Cracker Crumbs (I use Panko)
1/4 Cup Chopped Onion
1/4 Cup Chopped Green Pepper
1 Clove Minced Garlic
1 tsp. Salt
1/2 tsp. Black Pepper
2 Eggs (Lightly Beaten)
Oil for frying
Peel, boil and mash potatoes, set aside. Boil fish until it flakes easily. Drain and flake fish with fork. Mix fish, potatoes and rest of ingredients together well by hand. If mixture is too crumbly, add another egg. If it is too sticky, add more crumbs. Form mixture into cakes and fry over medium heat in oil until nicely browned. Flip over and cook until nicely browned on other side.
These are also great heated up as leftovers.
