I've been making my own dry dredge and it is sooooo much better than Zatarain's.

I use equal parts corn four and yellow corn meal, but white corn meal and wheat flour could be used as well. The only thing I add to it is Seafood Splash, and I add jsut enough that I can see the flour and cornmeal change color.

This is a whole bunch cheaper than buying pre made dry dredge and so much more flavorful.

It's good on frog legs, lamb and turkey fries as well as shrimp and oysters.
