Best way to package fillets for the freezer?

If you absolutely must freeze them dry vacuum them, although it is expensive. I personally like to vacuum pack them in my stomach within 48 hours after getting the little buddies home. Don't generally catch enough to freeze and if I do will throw them back. I like to eat what I catch and keep only what I can eat. If I'd been smarter I'd of married a woman who likes fish more than once per week.

The secret is not to rinse the fillets, leave the blood and slime on then fill the bag with water. Do the rinse when they thall. They will keep a better flavor this way.

When I do use the vacuum sealer, I dry off and then wrap the fillets in plastic wrap before putting in the vaccum sealer. Too often, without the Saran wrap, even a little moisture will compromise the seal in the freezer, and I get broken seals and freezer burn.

this is what we do. 12 fillets per bag.

I pt the fillets in aziplock freezer bag with water and salt, Works for me !

when put up fish I use a foodsaver vacuum sealer and I usually put 1pound per bag that's usually about enough for me and my family a good dinner I figure about 1pound for 2 people

Take all of your two litre soft drink bottles and cut the tops out of them. Put your fillets in the bottle and fill with water. Place in your freezer. Thaw out and use them over and over at no additional expense.
Works for whole fish if you don't have to many big ones. At least the fins won't punch a hole in the container like the freezer bags.

Just read your post. What a great idea for whole fish. Any way you can freeze them in water without air is a good way. Anybody that can taste the difference has got a better taster than me. Go Fishing.

Same here with freezing in the water. They never last long enough in the freezer to worry about getting freezer burnt! :D
