    Boudin


    1/2 Cups Chopped Onion

    1tablespoon Chopped Parsley

    1/2 Rib Chopped Celery

    3/4 Teaspoon Salt

    1/2 Teaspoon Black Pepper

    3/4 Teaspoon Red Pepper (cayenne)

    3/4 Cups Cooked Rice

    2 Green Onion Tops Chopped

    4ea Crappie Fillets Boiled.

    In A Sauce Pan Boil Crappie In Salt Water Get The Water On
    Full Boil Add The Crappie Fillets Bring Back To A Boil For Two Minutes Remove
    Fillets.
    In A Pan Or Rice Cooker Add Rice And All Ingredients Except Fillets Plus 1/2 Water And 1/2 Chicken Broth For Cooking The Rice.
    After The Rice With Spices Are Cooked Mash Up The Crappie Fillets Mix Into The Rice Mixture And Serve.

    I love boudain but never made it and wouldn't have thought about using crappie. . . . . . hmmmmm. Got some in the fridge now - it's our favorite football food!

    ALSO,

    If you leave out the boiled crappie and make the rest of the recipe


    it is a great side dish .

    with fried crappie instead of potatoes.
