    Default Crappie Cakes

    ...had some crab cakes at a restaurant the other night and thought...what the heck...I could make these at home with some of my "frozen assets".

    I did some research on the web for crab cake and fish cake recipes and came up witht the following.

    I don't measure anything...you'll just have to use your own taste and "wing it"

    And....they were as good as the restaurant variety...actually better!

    1. Thaw fish filets
    2. Boil (yes, boil) filets in lightly salted water until they float (I added some crab boil seasoning for flavor)
    3. Remove the filets from the water (delicately) and put the them in the fridge for about an hour (this firms them up like crab)
    4. Chop and Saute some veggies like: onions, carrots, red bell peppers, yellow bell peppers, garlic and jalepenos (for heat)
    5. Remove that mix when finished and put in fridge too

    While both chill...You should chill too..enjoy a beverage or two

    When everyone and everthing is chilled:

    6. In a large bowl...mix the sauted veggies, some grey poupon or dry mustard, some mayonnaise, an egg, some Louisiana hot sauce, or cayenne and whatever seasonings you like
    7. Fold in the fish filets and kinda bust 'em up as you combine them into a lumpy, yet consistent mix
    8. Add bread crumbs (or smashed crackers, or whatever)
    9. Form patties
    10. Roll the patties in the bread crumbs one more time
    11. Fry 'em up in a little veggie oil...and serve with your favorite sauce.

    PS: they make great leftovers too.
