There's a family of Asians that pick the bamboo sprouts off my property by the truckload in the spring. I've literally seen two women fill the bed of a full size pickup in just a couple hours. They told me they can it so they can cook with the bamboo year round. They always drop off a Christmas card for me each year.
I would think you'd have to dig up the sprouts to transplant them. They're so tender when I pull on them, they break off. At least for the few days, then they get tough.
