Looks great man. I've done the mustard before. Use to do on tilapia also. We would let it soak like you say. Didn't do the other stuff though. Just cornmeal. The flour would be a great addition and the lemon pepper. I love lemon pepper on the chicken also. You really don't taste the mustard...it adds a kick as he says and a tang thats hard to explain.
I guess cooking fish for dinner is the advantage to getting an early start . I fished till dark and ended up with a dozen but didn't keep a fish under 12 inches. It was a tough bite after you left and the wind that was suppose to be 10 was more like 20 mph, but there was only one other boat on that little part of lake X.
