    I used to snag there. We call them Spoonbills. Not the best tasting fish but are boneless. The Arkansas River has a good population of Paddle fish and commercial fishermen catch them for the eggs. High dollar caviar is made from the eggs. We caught some big ones in gill nets below Dardanelle when I netted. Do you eat them ? Try filleting and baking with lemon , butter, and garlic. makes descent fish sandwiches.

    I like the meat, just gut it, skin it, and slice into steaks and grill with butter and Cavenders.
