I have the Bayou brand cajun cooker, 3 basket model. I strain the oil into the jugs and store it in the frig., it's 2 years old, still taste and smells good. I've dropped fresh cut fries past the baskets, found them still fresh and hard when draining the oil.
I found a combo cooker at a carport sale for $10. Comes with a gas burner frame, alum. fry pot 7" high, charcoal pan, 2 water pans, 3 racks, electric element and a half bottle of gas. Bigger and thicker metal than most dome style smokers, porcilene finish. I've smoked with it some 12 times and still looks new. Not like the cheaper smokers that turn to rust after 2 or 3 smokings.
